Baked Chicken Parmesan Wraps
Even the sound of this dish makes you think you can feel its scent immediately, am I right? This crowd-pleasing meal is perfect for anyone, and the best part? Kids love it! It is healthy, high in protein and of course, utterly delicious. Today I will show you how you can prepare the best chicken parmesan wraps but with a slight twist - with egg roll wrappers. Why? It is lower in calories and tastier. Trust me, once you try it this way, you will never look back.
This is quite easy to make and doesn’t take much time, which if you have kids or lead a busy life, you will appreciate it. For the prep, you will need about 15 minutes, and another 30 to cook. Give another 15 minutes of leisure time to take it slowly and it won’t take more than an hour.
Ingredients:
Chicken breasts - 1 pound
Egg roll wrappers - 12
Marinara sauce - 2 cups for the wraps and also another for serving
Baby spinach - 2 cups
Parmesan cheese, grated - ½ cup
Mozzarella cheese, shredded - ½ cup
How to prepare and cook:
Take out your large saucepan and place the chicken breasts in it. Pour water only to cover them and then let them boil first then simmer for about 15 minutes. After that, take them out to drain and cool a bit. When they are ready, shred them with 2 forks. Then put it in a bowl and coat the chicken with marinara sauce.
While you are doing the previous step, you can preheat the oven to 200 degrees C and take a wire rack and spray it with cooking spray. Next, place it upon a baking sheet.
Lay each of the egg roll wrappers and start layering them. Place the spinach, then the shredded chicken breasts, and top with mozzarella and parmesan.
To make the wrappers able to fold, you can gently brush each side with water. Then you can fold into triangles. In order to seal the sides, press them and then start placing them on the wired rack. Also, don’t forget to apply cooking spray on the top.
Bake them for about 15 minutes, you will know they are done when the edges are crisp and golden.
The dipping sauce can be marinara or some other of your choice.
